Ingredients for preparing Coco Beet Soup

  • Onions (Sliced) (kata pyaaj) - 1 cup
  • Olive Oil - 1 tbsp
  • Chopped Carrot (kata gaajar) - 0.5 cup
  • Minced Ginger (kata adrak) - 0.5 tbsp
  • Chopped green chillies (kata hari mirch) - 2
  • Chopped lemongrass - 1
  • Lime Leaves - 5
  • Chopped beetroot (kata chukandar) - 1
  • Vinegar (sirka) - 1 tbsp
  • Vegetable Stock - 250 ml
  • Salt and Pepper (namak aur kaalee mirch) - as required
  • Coconut milk (naariyal ka doodh) - 200 ml
  • Cream - 1 tbsp

Steps to prepare Coco Beet Soup

  1. Add onions, carrot and minced ginger to some heated olive oil and stir.
  2. Add the green chillies, lemongrass and lime leaves.
  3. Add chopped beetroot and mix all the ingredients well.
  4. Now add the vinegar.
  5. After strring it, add the vegetable stock as much required.
  6. Now add some salt and pepper and pour in the coconut milk and stir.
  7. Let the soup simmer for about 10 minutes.
  8. Put it in a blender and blend.
  9. Garnish with some fresh herbs.
