Ingredients for preparing Coconut Coated Chicken Salad

  • chicken breasts - 4
  • Black pepper (kaalee mirch) - 1 pinch
  • coconut oil - 2 tbsp
  • Virgin Olive Oil - 2 tbsp
  • Salt (namak) - as required
  • Egg (anda) - 2
  • Spinach (palak) - 8 cup
  • Lemon Juice (nimboo juice) - 2 tbsp

Steps to prepare Coconut Coated Chicken Salad

  1. Trim any remaining skin or white parts from the chicken breasts.
  2. Rinse under cool water and pat dry using a clean kitchen towel or parchment.
  3. On a chopping board, cut the chicken into strips somewhere between ½ an inch and an inch thick. Set aside.
  4. In a shallow dish, combine coconut flakes, almond flour and salt and pepper.
  5. In a bowl, crack eggs and beat lightly.
  6. Dip the chicken strips first in the egg and then roll in the coconut/almond flour mixture.
  7. Heat the coconut oil in pan over medium-high heat and saute the chicken strips until the exterior turns a golden brown and inside is no longer pink.
  8. Remove from heat and place atop a bed of mixed greens.
  9. Drizzle with olive oil, lemon juice, salt and pepper and serve immediately.
