Ya it gets boring to eat food with restricted taste & limited options. Having an Indian pallet we have a different taste of foods but we need to keep our diabetes also under control. I was also in search of a few tasty & healthy breakfast options after being diagnosed with diabetes five years back. To my wonder i found some healthy & tasty breakfast options to try to keep my taste Buds happy & at the same time blood sugar under control. I was guided by an article on diabetes diet & thought of trying out foods rich in fiber & vitamin content, i also made it a point to include fruits as Kiwi,Pineapples,Papaya in my breakfast on alternate days.I tried different recipes that used whole grains to make noodles/pasta, idli-dosa made from brown rice, thalipeet made out of millet flour, in my breakfast.
Well, being Indian and diabetic is actually a better deal than the rest of the world i guess. You can look up recipes for these dishes online. Chana dal pancakes (in tamil it is called Adai), Green Chutney with open toast (brown bread) with grated carrots on top and the easiest of them all Bread Burji or bread upma as it is called in the south. Sometimes we even make Dhoklas for breakfast.
